The volatile extract obtained by steam distillation of the oil from roasted sesame seeds was separated into its neutral, weakly acidic, acidic, and basic fractions. The neutral fraction was further separated by preparative TLC. All fractions were analyzed by a gas chromatograph (GC) equipped with FID and FPD, and by gas chromatog./mass spectrometry (GC/MS) and/or gas chromatog./Fourier transform-IR (GC/FT-IR) spectrometry. Two-hundred-and-twenty-one constituents were identified. One-hundred-and-forty-six of these compounds are being reported for the 1st time in the aroma of roasted sesame seeds, 7 of which were newly identified as naturally occurring flavor components. BACKGROUND : Coffee substitutes made of roasted chicory are affected by the formation of acrylamide whose main precursor is asparagine. One strategy for limiting the formation of acrylamide is to reduce free asparagine in the chicory roots by lessening the supply of nitrogen in the field. However, decreasing nitrogen fertilizer could affect the formation of the volatile compounds and, consequently, the sensory characteristics of the roasted chicory. The present study aimed to investigate the impact of the nitrogen supply in five com. varieties on their aroma profile. RESULTS : The addition of 120 kg ha-1 of nitrogen fertilizer in the field resulted in a greater amount of pyrazines in the roasted chicory. Triangle tests were performed to determine the effect of the nitrogen level on the sensory quality of the five varieties. The results revealed that the chicory aroma was modified in two out of five varieties. CONCLUSION : The results of the present study suggest that a strategy aiming to limit the amount of acrylamide could affect the sensory quality of some varieties of chicory. Further acceptance tests need to be conducted to assess the effect (whether favorable or otherwise) on the sensory quality of the coffee substitutes. © 2016 Society of Chem. Industry.

Quorum sensing has been implicated in the control of pathol. relevant bacterial behavior such as secretion of virulence factors, biofilm formation, sporulation, and swarming motility. The Al-2 quorum sensing pathway is found in both Gram-pos. and Gram-neg. bacteria. Therefore, antagonizing Al-2 quorum sensing is a possible approach to modifying bacterial behavior. However, efforts in developing inhibitors of Al-2-mediated quorum sensing are especially lacking. High-throughput virtual screening using the V. harveyi LuxP crystal structure identified two compounds that were found to antagonize Al-2-mediated quorum sensing in V. harveyi without cytotoxicity. The sulfone functionality of these inhibitors was identified as critical to their ability to mimic the natural ligand in their interactions with Arg215 and Arg310 of the active site.

Volatile compounds in the headspace gas of light and deep roasted sesame seed oil were analyzed by gas chromatog. and gas chromatog.-mass spectrometry. The present method resulted in good reproducibility (<6.6% as a relative standard deviation) in the determination of individual volatile components. About 64 compounds, including 30 heterocyclic compounds, 7 aliphatic aldehydes, 11 ketones, and 16 miscellaneous compounds, were identified. Peak area percentages of 2-methylpropanal, 2-butenal, 2- and 3-methylbutanal, 2-propanone, 2-butanone, 3-methyl-2-butanone, 2,3-butanedione, 2- and 3-methylfuran, and 2,5-dimethylfuran, all of which could not be detected by steam distillation and column adsorptive concentration (previous method), increased in deep roasted oil. Hexanal decreased from 6.13% to 2.55% in deep roasted oil. Compared with the previous method, pyridine, thiophenes, and sulfides could be detected only by the present method, but unsaturated aliphatic aldehydes could not.

The reaction of 4-hydroxy-5-methyl-3(2H)-furanone (HMF) with cysteine or H2S at pH 6.5 for 60 min at 140 °C produced complex mixtures of volatile compounds, the majority of these containing either sulfur or nitrogen. Of the 68 compounds detected, 63 were identified, some tentatively, by GC-MS. Among the identified compounds were thiophenes (10), thiophenones (6), thienothiophenes (5), thiazoles (5), trithiolanes (4), pyrazines (6), and oxazoles (4). More compounds were produced in the reaction of HMF with cysteine (63) than were formed in the reaction with hydrogen sulfide (33). In both systems, thiophenones were the major reaction products, accounting for 25-36% of the total volatiles formed. Possible reasons for the differences in the composition of the 2 systems are discussed. The contributions of these reactions, and their products, to the flavor of heated foods are considered.
